Creamy butter beans with wilted greens

A fabulous seasonal light dish making the most of winter greens. Use spring greens, kale, spinach, Swiss chard – all are incredibly nutrient rich. Serve with rice or flatbreads for a more substantial meal.

Ingredients

1 tsp cumin seeds
1 tsp coriander seeds
2 tbsps olive oil
200g Cavolo Nero, kale or spring greens, washed and roughly chopped
3 garlic cloves, crushed
400g can butter beans, rinsed and drained
1 tsp smoked paprika
250ml Rice Dream
1 tbsp cornflour made into a paste with water
Rice or flatbreads to accompany, optional

Method

  1. Toast the seeds in a frying pan until they start to turn golden.
  2. Remove and grind with a pestle and mortar.
  3. Heat the oil in a frying pan and sauté the spring greens and garlic for 2 minutes.
  4. Add the spices and butter beans.
  5. Stir in the paprika, Rice Dream and cornflour paste.
  6. Simmer for 5 minutes until it thickens.
  7. Serve with rice or flatbreads if wished.
