Green tea scones

A lightly scented scone ideal as a snack or tea time treat. This is a simple recipe using Oat Dream or Vanilla Rice Dream to make a soft and fluffy dairy free scone – perfect with a dairy free spread.
Ingredients
1 tsp green tea leaves ground to a powder
450g/1lb strong white flour, plus a little extra for rolling out
80g/3oz vegan spread
75g/3oz xylitol
2 free-range eggs, beaten
5 tsp baking powder
250ml/8½fl oz Oat Dream or Vanilla Rice Dream
1 free-range egg, beaten for glazing
Method
- Preheat the oven to 220°C, Gas 7.
- Lightly grease a baking tray and line it with baking or silicone paper.
- Put the green tea and flour into a large bowl and add the dairy free spread.
- Rub the flour and spread together with your fingers to create a breadcrumb-like mixture.
- Stir in the xylitol, eggs and baking powder and use a wooden spoon to beat the mixture gently.
- Pour in half of the Oat Dream and stir to combine.
- Add the remaining milk a little at a time to create a soft and sticky dough (you may not need all the milk)
- Lightly flour a work surface.
- Tip out the dough and knead lightly to form smooth dough.
- Roll out the dough until it is 2.5cm thick.
- Use a pastry cutter, stamp out rounds from the dough and place onto the baking tray.
- Brush the tops with a little egg glaze. Bake the scones in the middle of the oven for 15 minutes, or until the scones are risen and golden-brown.
- Leave the scones to cool, then split in half and spread with dairy free spread and jam to serve.
