Sage and onion sauce

Creamy and packed with flavour this delicious sauce is wonderful served with roast chicken, duck and pork. Make in advance and freeze for up to 1 month.

Ingredients

1 tbsp vegan spread or coconut oil
1 tbsp olive oil
2 tbsp flour
3 medium onions, peeled and finely diced
200ml dry white wine
6 large fresh sage leaves, finely chopped
150ml Oat Dream

Method

  1. Heat the spread and oil in a large, nonstick frying pan over a low-medium heat, then tip in the onions.
  2. Cook over a very low heat for about 20 minutes, stirring occasionally, until very soft.
  3. Add the flour and stir for a further 5 minutes.
  4. Gradually pour in the white wine and stir until the mixture begins to thicken.
  5. Stir in the sage leaves and oat dream and bring to the boil.
  6. Simmer for 5 minutes.
  7. Season to taste, then pour into a jug to serve.
